From my Kitchen: Choc-PB Banana Muffins

Earlier this month, a dear friend and her daughter brought these muffins over while I was recovering from surgery. It’s official, these are a new favorite in our house… gluten free, dairy free (if using dairy free chocolate chips), and so easy to throw together.

2 eggs

2 bananas

1 c. peanut butter

½ tsp baking powder

2 T honey

2 tsp vanilla

Preheat oven to 400 degrees. Add all ingredients to blender except for chocolate chips. Fill lined muffin tins ½ way, top with a few chocolate chips, and bake for 13-15 minutes. Enjoy!
