From my Kitchen: Something Sweet (Protein Bites)

I love to spend time in the kitchen modifying and coming up with new recipes. Some creations turn out great, some… not so much. These protein bites will not disappoint! They’re a great substitute for your favorite snack or protein/granola bar and they’re tasty too.

15 minutes, 12–16 bites

1 c rolled oats

½ c shredded coconut, unsweetened (such as Bob’s Red Mill)

½ c cacao nibs (such as Nativas Organics)

½ c collagen peptides (such as SR Collagen Peptides)

½ c peanut butter

¼ c honey

½ tsp pure vanilla extract

In batches grind rolled oats, shredded coconut, and cacao nibs with a coffee grinder. Add all ingredients to a food processor and blend until fully integrated — the consistency of the mixture will look somewhat like cookie dough. Roll dough into balls that are about the size of a golf ball.

Refrigerate for up to two weeks in an airtight container or freeze for up to three months.

No food processor or grinder? No problem. Use cacao powder instead of nibs and mix all ingredients in a bowl until you reach the desired consistency. Keep in mind that this variation will have a coarser texture due to not grinding the rolled oats or shredded coconut.
