From my Kitchen: Weekday Green Smoothie

There is something magical about starting the day with greens. In our home, this smoothie is part of our morning routine that invites in a little bit of that magic to kick off each day. AND it only took three days of moderate resistance from my son before welcoming (or, depending on the day, accepting) this green powerhouse each morning.

Green Smoothie

5–7 minutes, 2 servings

½ lemon, peeled

½ large or 1 small cucumber

Handful of spinach

Handful of kale (or to taste)

1-inch of ginger (peeled)

½ green apple (without core)

2 c. water

½ avocado (without pit or skin)

1 T coconut oil

1 T MCT oil

Blend lemon, cucumber, spinach, kale, ginger, green apple, and water in a heavy-duty blender until smooth. Add avocado, coconut oil, and MCT oil to mixture and blend until all ingredients are fully integrated. To save time, cut up enough lemon, cucumber, ginger, and green apple for two days and place the extra in a mason jar or container in the refrigerator for the following day.

And since it’s cold most of the year where I live in Montana (ha!), I opt to use water instead of ice cubes…if you prefer a colder smoothie, feel free to play with using ice cubes and less water.
